Happy Easter Everyone!

Happy Easter !!!


I hope your Easter has been nice.  We started ours out with delicious food.  We had cornbread, sausage- wanted links but only had crumbled.  I should have made patties, but decided to make sausage gravy and then realized too late that we did not have enough milk for basically anything.  We also had Creamed Eggs, I made it with the little milk we had, it was OK, but would have tasted better with more milk.  It was a little watered down.

I love making cornbread in my cast iron skillet.  It is so easy and bakes up really  nice.  I heat the skillet in the oven until it is hot, usually I leave it in the oven while I mix up the cornbread.  Then I keep my pot-handle-holder right on the stove to remind me to use it on the skillets handle.

I pull the pan out of the oven, and grease it with a very small amount of bacon grease.  Then pour the dough in and stick the pan back into the oven. It comes out golden brown and delicious!

The creamed eggs were a little different today, as I was low on the milk.  So I melted the butter in the pan, added flour and mixed until combined.  Then I poured in the milk.  I only had about a half a cup of milk, so I had pilot rinse the milk jug with water and pour the rinsing water into the pan.  When it was at the right consistency, it looked wonderful, but it did not taste enough like milk or 'cream', however it was what we had.  Then when we added the sliced eggs, and a little more salt it tasted almost right.


It was good.  And we all were full.  Too full for a Sunday morning with Church still to go to.  Believe me, it was hard to keep my eyes open during Church because my tummy was full and I was content!!

Here is the pan of crumbled sausage.  I would really have preferred link sausage and then I would of had the grease from them for sausage gravy.  But we crumbled the sausage over the top of our creamed eggs and that added some flavor to the weak cream sauce. 

We did put the creamed eggs over the cornbread this year.  I did not even make toast as a choice and everyone was just fine with the breakfast,  I personally think that the creamed eggs over buttered toast is better than the cornbread, but that is just my humble opinion.  It is fine both ways.

I just had to put the last two photos on here.  I bought this cake plate from a second hand store, it is snowmen and really for the Christmas Holidays but I love it so much I might just keep it out all year.  Snowmen don't really have to be seasonal, do they? 


Anyway, I am now ready to put it away yet, I want to enjoy it more.  It was only $2.00 and really is beautiful and in perfect condition!

Well this was our Easter Breakfast and like I said, it wasn't perfect, but it was delicious.  It was traditional, for us, and it was filling and relaxing.  We did make it through Church and did not fall asleep, but it was close!!

  1. How funny - I can't tell if you really liked the breakfast or not LOL But I love creamed eggs & cornbread so I would have enjoyed being at your breakfast table :) I would have brought some milk haha!
