My Food on Fridays for May 29 - Eggs for Dinner

Eggs For Dinner Wonton Cup Style

For dinner tonight I decided to make something Breakfasty so I went with Ham, Cheese, Eggs and more.  The more is green beans, mushrooms, cream cheese, and Wonton squares.  Next time I will use Green Chilies.  You don't need to add salt, but a little pepper would be nice.  In fact, a few diced onions sauted in the butter might be tasty as well.
So I set off beating 6 eggs in a large bowl.  Then I added about a cup of diced ham.  Then about a cup of grated cheese.  I opened a can of green beans and a can of mushrooms, drained them and added them to the bowl.  I then mixed everything up.  I heated up a cast iron skillet and put about a tablespoon of butter in the hot skillet.  Then I poured the egg mixture in the skillet and gently let it cook stirring and gently turning it like scramble eggs until just dry.
 
As the egg mixture was cooking, I laid the wonton wrappers on the muffin tin.  I have a non-stick pan and did not grease it at all.  And it worked out fine.  Except on one when the shell ripped and it stuck a little bit.  
After the eggs were ready, I used my large cookie/ice cream scoop to put equal amounts into the Wonton lined muffin tin.  I found it just as easy to put the mound of eggs on the flat Wonton and let gravity or the push of the scoop fill the hole. 

  
I filled them really full and put the tray in the oven, preheated to 375 degrees.  I baked them for about 10 minutes watching the corners of the Wonton's so they didn't get too brown.  I removed them and set the pan on a baking rack to let them set and cool for about 5 minutes.
After cooling, I plated them onto a platter for serving.  The Wonton bottoms were not crispy.  But they seemed cooked to me, they were soft.  I liked them, but Pilot wasn't sure he liked the use of the Wonton wrappers.  Angel and Hubby gave me a thumbs up.  We all like the eggs, a cross between scrambled and omelet.  The eggs were really good.  I even forgot to put salt in them like I was planning, but I forgot it and they were totally fine without adding extra.

This plate has one that came out slick and the one that came out in pieces. I ate that one, OK, I ate both of these and they both tasted great.

I definitely will make these again.  Maybe line the muffin tin with a thin slice of ham or maybe turkey.

I put out fixings for a green salad and that was good with the eggs. 

In this photo we see Angel's plate with an Egg Cup and a pile of brownie/cake stuff.  She ate her salad first.  When it came time to eat her chocolate mess, she could only take one bite as it was much to chocolately for her.  She does have a threshold that she doesn't cross when it comes to chocolate.  She doesn't like dark chocolate and I did use some dark on the top.
I made this Chocolate Mess with a new recipe and an old but used for the first time stoneware pan.  They did not turn out wonderful, I don't know if it was the pan or the recipe.  But I won't be making it again.  Only because I have some tried and true recipes that work out all the time.

Photo Catch Up

Here are both Angel and Pilot in their bumper boats.
Angel put her boat to the dock after just a short ride. She didn't want to get wet, because is was only 60 degrees and a bit windy.  When my kids first went in the boats, they were the only ones.  Then after about 5 minutes, other kids trickled out and began boating and they were using the water guns.  It was getting cold and wet.  So she ducked out fast.  Pilot was not too far behind.

I am not sure what Pilot is dressed like.  Maybe he is going skiing or snow boarding?  Certainly not headed for Pilot school or work as a Airline Pilot.





How about these early budding apple blossoms!  They were really  pretty.  Our tree is loaded with baby apples now.  I need to thin them out soon, so they can produce a few this year.



Here is Pilot on his last day of Year End Testing.  Hurray school was almost over at this point.



Do you have trouble with your kids or people you know tilting back on the back legs of their chairs?  I do all the time.





Well this library had some unique chairs.  You could sit flat on the floor, totally horizontal- normal or you could rock forward for a slightly front lean.  Or rock back for the slight back lean that everyone seems to enjoy.  What great chairs!!!  I have decided that I definitely need these in my home so that the kids don't have to hear, "four on the floor, Please!!" anymore.




OK and yes this is chocolate!  I have to have my fix now and then.  This is actual Norwegian chocolate that I broke down and indulged in while Pilot was doing his testing.  A roll of Smil, is close to Rolos.  The bar is a Firklover, hazelnut in milk chocolate.  Both made by Freia and both delicious.  It took me about a week to eat them.  I did share with the kids, a little.  Hubby didn't get any, I don't think, because he wasn't around when I got it out.  Sorry!





Some of my cousins grew up in Loveland, Colorado.  My Aunt and Uncle still live there.  So when we accidentally came upon this sign in downtown Salt Lake, Pilot and I grabbed a photo of it.  We thought it was awesome.







This was snatched by Pilot and it was supposed to be a photo of a cloud that looked like a plane.  But the car hit rough road and the camera bounced just as it clicked.  However, it sometimes looks like the shiney top cloud has a wings coming out of it.  But this was not the cloud he was after.  It was a grey one just on top of the mountain.  Toooooo funny.

Update on the Kittens

Here are the kittens when they were about a month old.  We took them in a tub (large tub) and let them venture out into the grass for the first time!  It was so fun.  Some were shy, some were adventurous, it was fun to watch each kitten experience something so weird, new and strange.



Here are all the orange kittens nursing on Bebe- 3 of them are hers, the other two are Willows.  The two moms have been helping each other with feeding and cleaning of the kittens.  It has been fun to watch.  There has never been any shunning of a kitten or fighting between the mom's.  It has gone super smooth for all of them.







When it was time to let them venture out and find a home of their own, we started to take these photos:


Here is Marshmallow.  He is really cute and loves to explore.  He pounces at everything and is very gentle.  He rarely uses his claws when playing with us.

He has not found a home yet.  The kids want to keep him.  Maybe Willow will have to move out?

On the right, he has fallen asleep in Pilots hands.  He loves this little guy.



Here is M&M, he was named by a nurse at the Vet's.  He cried the whole time he was there.  He cries all the time he is away from his siblings and his mom or grandma.  He is tiny and sweet.  We love him.  He found a home with a wonderful family.  They have 3 early elementary kids that were so excited to have him.  They seem like they will be really good for him.  I bet he stops crying soon!!  At least I sure hope he does.





This is Fluffball, he doesn't really have a name, he just is cute and fluffy.

He is sticking his tongue out here. I caught the picture just as he was yawning!  Too funny!  I think he is telling me that he doesn't want his photo taken.  He wants to stay here with us and not go back on KSL Classifieds Listing to be sold!.

He needs to find a home too.  He is the last of the 11 kittens to be adopted or spoken for, (that is if we count Marshmallow as staying with us).  I hope we find a home for him soon.  He is so loving and gentle too.  Runs in their family.


Here is Angel with Lily.  She is spoken for and that is all I can say for now.

We love her.  She is so cute and cuddly.  She is the first one to be chosen.  We had tons of calls for her, but even though she went first, the others who were interested in her took her sisters.  Happily took her sisters.




I must say that all our adopted families came quite a distance to get their kittens.  We apparently had just the right ones for each of them.  It was pretty amazing and cool to be able to provide others with darling, healthy kittens.

Two of the Calicos went to two sisters who definitely wanted girl calicos.  They were only going to take one kitten, but couldn't decide between two of them, so they took two!  Good for me, good for the kittens and I hope good for the sisters!!!  Their mom was totally fine with the choice, so I was happy.

The next calico went to a wonderful young mom of two boys.  She wanted a calico girl and came a longs way to get her.  They came in the rain and coldish wind.  When she saw the little puff ball, she was thrilled.  But then her husband eyed Frisbie.  Frisbie is a tiger looking male.  He is darling too.  He is really good about letting little kids hold him.  He just goes limp and is very tolerant.  He doesn't try to get away.  So as they left, they decided to take both sister and brother!  Two gone at the same time, again.  What luck.  I am sure they will be happy together.  However, Pilot was really sad to seem him go.  Sorry, bud.

The next bunch went together too, however, they will be at 3 different homes.  One young newlywed and her mother came to pick out male, orange haired kittens.  They saw M&M and asked me to hold him.  When they arrived, they decided to take a long hair instead.  That is what they really wanted.  So the young lady picked a kitty and then her mom decided she had to have one to.  They are naming one Sarge, because the young bride's husband just deployed and she wants/needs something to love around.  I am proud of her husband and of her sacrifice for us.  And they also took another male, fluffy, orange kitten for their friend who wanted one!!  I am sure, very sure these guys went to good homes.

It has been fun to have these babies around.  They are all so wonderful and unique.  I am grateful we found homes for almost all of them that seem to be caring and responsible.  I miss those who are gone, but I am hoping they are being loved and are happy.
